It would be an understatement to say I loved mac & cheese before I went vegan ♥️
It was my fave as a kid 👧🏼 became my staple through uni 👱🏼♀️ and was a weekly meal for me just a few years ago 🙋🏼♀️ I LOVE the stuff 🥰 My friends all knew of my obsessed (just one of the reasons they were so surprised when I turned vegan) 😛
My last visit to @themacfactorylondonwas around three years ago. Since I went vegan, I’ve been counting down the days until they released a vegan option 🤞🏼🌱
Well, the day has arrived, my friends. Here’s what I thought!
🌱Macaroni cheese w/ wild mushrooms & garlic
💭 The first thing I noticed was that it’s very salty but my tastebuds got used to this the more I ate. The cheese has a sharp taste which is hard to achieve! They use a mix of @daiyafoodsfarmhouse, @violife_foods mozzarella & secret cream cheese! It melts like a dream and they’ve managed to make it more like a rich, thick, creamy sauce than just some half melted cheese. There’s also a generous amount of cheese – it wasn’t dry at all. It does taste like vegan cheese (as you’d expect) rather than regular cheese but my tastebuds have adjusted to that now so I didn’t mind that. The garlic flavour is quite strong and as a bit of a garlic lover, I was here for that. The parsley, mushrooms and breadcrumbs all complement the dish nicely! I wouldn’t mind more scattered throughout. Chris found it a little rich to eat a while pot but GIMME ALL THE RICHNESS. Creamy, rich dishes are right up my street. I think, for a dish where the cheese is the focus, and we all know vegan cheese can be hit or miss, they’ve done a really good job!
