This “salmon” poke bowl never leaves my weekday roster because it’s so versatile 🐟
Ingredients
🐟 For the salmon
2 tbsp soy sauce
1/2 sheet nori, chopped
100g vegan salmon sashimi
🍚 For the rice
Sushi rice
2 tbsp rice vinegar
1 tbsp sugar
1 tsp salt
🥒 For the cucumber
1/4 cucumber, grated
1 tbsp rice vinegar
Pinch of salt
🌱 For the bowl
Avocado
Kimchi
Wakame seaweed salad
Seaweed crisps (or cut up nori)
Edamame
Spring onions
Sesame seeds
Sriracha mayo
Method
1. Prep your “salmon” – add salmon, soy sauce and seaweed to a bowl and leave to marinate
2. Meanwhile, cook your rice according to packet instructions. Once cooked, leave to cool for five mins
3. In a small saucepan, combine rice vinegar, sugar & salt together and heat until the sugar has dissolved. Then, fold into the rice
4. For your cucumber, grate and then squeeze out any excess with your hands. Then, add to a bowl with rice vinegar and leave for a few mins
5. In a bowl, place your rice, salmon, cucumber, kimchi, wakame seaweed, avocado, seaweed crisps & edamame then top with spring onions, sesame seeds & sriracha mayo
6. Serve and enjoy!
