Christmas Fettucine

CHRISTMAS FETTUCINE 🎄🍝

If you’ve seen The Holiday, you’ve also probably had the urge to eat this dish over the festive period so I decided to bring it to life as I imagine it! 🍝

Ingredients
450g fettuccine
1 tsp olive oil
2 tbsp butter (I used flora)
4 tsp minced garlic
1 large shallot, chopped
50ml dry white wine (I used savvy b)
350ml cream (I used oatly)
Pasta water (from the cooked pasta pot)
2 tbsp cream cheese (I used Philadelphia)
100g parmesan (I used violife)
2 tbsp nutritional yeast
Black pepper
½ tsp nutmeg
1 tsp rosemary
1 tsp thyme
2 tsp miso paste
Squeeze of lemon juice
Fresh parsley
Pine nuts

Method
– Cook your pasta according to instructions
– Add olive oil and butter to a pan on a medium heat and let it melt
– Add your garlic and let it cook for a minute
– Then add shallots and cook for a couple of minutes
– Add your white wine and let it reduce for a few mins
– Add salt, pepper, nutmeg, rosemary & thyme
– Add your vegan cream and some pasta water until the sauce is thickened to your liking
– Add miso paste and a squeeze of lemon juice
– Add your parmesan & nutritional yeast and cream cheese
– Add your cooked pasta and parsley and mix well
– Serve with a sprinkle of parsley, some more cheese and some pine nuts
