Found my new favourite sn”ackee” 😍
I’ve been cooking with more Jamaican ingredients and recipes recently, and whilst I’m loving all of the flavours and textures, I’ve fallen particularly head over heels for the country’s national fruit – ackee 🇯🇲😍
Originally imported from West Africa in the 1700s, this fruit is so unique! Unlike others, it’s more savoury than sweet and the texture is creamy and buttery 🤤
Traditionally, it’s paired with saltfish but in the vegan world, people say that it makes a good scrambled egg sub 🍳 I’ve had it a couple of times like this in restaurants and really enjoyed it but decided to give it a whirl myself. So, I cooked up a Jamaican inspired big breakfast! 🇯🇲
Here’s what’s on my plate:
🌱 Scrambled ackee w/ spring onions, coconut oil, spring onion, garlic, scotch bonnet pepper, chives, nutritional yeast, thyme, vegan butter & black pepper (recipe inspired by @samhodges88)
🌱 Plantain fried in coconut oil
🌱 Avocado
🌱 Callaloo with garlic, onion, red pepper, paprika, thyme, scotch bonnet, salt, pepper (recipe inspired by @africanbites)
🌱 Mushrooms sautéed in vegan butter & thyme
🌱 @nakedgloryuk vegan sausages
🌱 Baked beans (I keep seeing @rgveganfood’s plates loaded with these so I was craving them)
What else would you add to make this the perfect breakfast? 🤔
I personally can’t wait to venture to lots of Jamaican restaurants in London once it’s safe 😍 If you haven’t tried Jamaican food before, prepare your tastebuds 🤤
