RECIPE: LATIN AMERICAN BREAKFAST (DIY Arepas) with Black Beans, Plantain, Wasakaka, Roasted Carrot Hot Sauce & Vegan Eggs 🌱🌽

Welcome to my new series where I team up with content creators to recreate our fave restaurant dishes!

This week, I visited @sophsplantkitchen to cook up a Latin American breakfast which she learned from the Venezuelan owners of @mirandacafe when she worked there.


300g PAN corn meal
1 tbsp olive oil
1 tsp salt
450ml boiling water

1 red onion
4 garlic cloves
1Tbsp coriander stalks
1 red & 1 green pepper
Red chilli
3 celery stalks
4 tins black beans
S & P to taste
Spice mix: 1 Tbsp: coriander, cumin, oregano, paprika, 1/2 stock cube, 4 bay leaves, 1.5 tbsp red wine vinegar

2 ripe avocados
1 tbsp diced white onion
1/2 green pepper
1 green chilli
small handful of coriander & parsley
2 cloves minced garlic
1.5 tbsp white vinegar (more to taste)
juice from 2 limes
1.5 tbsp olive oil
1 tsp salt
small boiled and peeled potato (optional – for creaminess)

2 large roasted carrots
1 scotch bonnet chilli
2 tbsp olive oil
1 tsp salt

200g chickpea flour
200ml water with 1/2 a stick cube dissolved
Spices: 1/4 tsp salt, 1/2 tsp pepper, 1 tsp turmeric, 2 tsp smoked paprika, 1/4 tsp Kala namak (not essential)

Other ingredients: 1 ripe plantain, sliced, fried in oil and lightly salted. Fresh coriander, salad.


🌱AREPAS: mix all the ingredients together first with a spatula and then your hands, until there are no lumps left. Shape into discs and fry on both sides until golden brown and hollow. Keep finished arepas in the oven on a low heat.
🌱BEANS: finely chop onion, garlic, chilli, pepper, celery and sauté in a heavy bottomed pan until caramelising. Add spices and cook until fragrant. Pour in the beans and their juice, cover and simmer for 20 mins. Add the red wine vinegar before serving, season to taste.
🌱 WASAKAKA: blend all ingredients together, season to taste
🌱 ROASTED CARROT HOT SAUCE: roast carrots in oil and salt, cool and blend with the other ingredients. Season to taste.
🌱 fry the plantain, whisk the vegan eggs together and serve.
