I’m “soy” predictable 💁🏼♀️
I reckon 4 out of the 7 lunches I eat every week at the moment are some kind of variation on this dish 🤤
It’s packed with lots of different flavours and textures but only takes 15 mins to make. Just chuck in whatever veggies you have / want! Here’s what I normally have:
🧄 Garlic (2-3 cloves)
🌱 Tofu
🥒 Courgette (1 whole)
🍆 Aubergine (1 small)
🍄 Mushrooms (handful)
🌱 Light soy sauce (3 tbsp)
🌶 Chilli flakes (1 tsp)
🥬 Spinach (handful)
🍯 Maple syrup (1 tbsp)
🌱 Sesame oil (1 tbsp)
🧅 Spring onions / leeks
🌱 Minced ginger (0.25 tbsp)
🧂 Salt & pepper to taste
🌱 Sesame seeds to top
My much lazier lunch option is a cheese and pickle sandwich using branston pickle and @violife_foods epic mature 🤤 An absolute bloody classic! 🥪
