Soy & Garlic Veggies

I’m “soy” predictable 💁🏼‍♀️⁣⁣

I reckon 4 out of the 7 lunches I eat every week at the moment are some kind of variation on this dish 🤤 ⁣⁣
⁣⁣
It’s packed with lots of different flavours and textures but only takes 15 mins to make. Just chuck in whatever veggies you have / want! Here’s what I normally have:⁣⁣
⁣⁣
🧄 Garlic (2-3 cloves)⁣⁣
🌱 Tofu⁣
🥒 Courgette (1 whole)⁣⁣
🍆 Aubergine (1 small)⁣⁣
🍄 Mushrooms (handful)⁣⁣
🌱 Light soy sauce (3 tbsp)⁣⁣
🌶 Chilli flakes (1 tsp)⁣⁣
🥬 Spinach (handful)⁣⁣
🍯 Maple syrup (1 tbsp)⁣⁣
🌱 Sesame oil (1 tbsp)⁣⁣
🧅 Spring onions / leeks⁣⁣
🌱 Minced ginger (0.25 tbsp)⁣⁣
🧂 Salt & pepper to taste⁣⁣
🌱 Sesame seeds to top⁣⁣

My much lazier lunch option is a cheese and pickle sandwich using branston pickle and @violife_foods epic mature 🤤 An absolute bloody classic! 🥪 ⁣⁣
