Lentil & Mushroom Wellington

Have yourself a merry “lentil” Christmas 🎄 {ad}⁣⁣

There was a time when the idea of eating a lentil & mushroom wellington instead of a beef roast for Christmas dinner would’ve had me in stitches 😂 but here I am, three years and two rolls of shortcrust pastry later, an absolute lentil fiend 😍⁣⁣

The mighty legume (lentils, chickpeas, dry peas etc.) is an amazing ingredient choice for many reasons 🌱 ⁣⁣
⁣⁣
Firstly, lentils are *great* for you – they’re rich in iron, minerals, vitamin B & fibre, a healthy probiotic food and packed with the same protein content as beef 🥩 (take that protein doubters).⁣⁣
⁣⁣
Secondly, they’re super sustainable, with a low carbon and water footprint 💦🦶so they’re a lot kinder to the planet 🌍⁣⁣

I decided to show off my legume prowess by cooking up an slightly more lentil packed version of @bosh.tv’s mushroom wellington 😍 The result was deliciousness in a little (well, huge) pastry package 🎁 ⁣⁣
