Ah, those three words we all long to hear: Bacon blueberry pancakes 🥓🥞 …but vegan obvs 🌱
I had some vegan bacon in the fridge which needed devouring so I thought I’d recreate an old fave. You know, without the animals 🐷
🥞 The soft, fluffy pancake recipe is from @bbcgoodfood and it bangs. Just google ‘Easy vegan pancakes’. I also added blueberries into my mix because why not?
🥓 My favourite vegan bacon is @this.uk. It’s the smokiest one I’ve tried and works really well as a contrast in sweet dishes
🍁 Drizzle that syrup like your life depends on it. When you think you’ve added enough, add a bit more 🤤
You don’t have to give up flavour, spend loads of money or dedicate hours in the kitchen when you go vegan 🙅🏼♀️ There are a tonne of beautiful recipes like this that take less than half an hour and use less than ten ingredients (most of which are cupboard staples) ⏰ You can also just as easily leave out the vegan bacon in this recipe for a much more affordable option 💰
