Lunchtime just got a plant-based pastrami glow up. It’s Plant Hour with @squeakybean! 🥳🌱
I made a creamy vegan pasta using @squeakybeanveg’s vegan pastrami with a recipe inspired by @veganbrownting & @rachaelraymag 🍝
Here’s the step-by-step:
🌱 Finely dice one white onion and fry in oil on low heat
🌱 Add a pinch of salt and pepper
🌱 Finely chop about 20 mushrooms (I used shiitake) then add to the onions
🌱 Add in 5 cloves chopped garlic and fry for a few mins
🌱 Add in 250ml soy cream, ¾ tsp kala namak, 150ml oat milk, 4 tsp nutritional yeast, 1 tsp mustard mayo (or dijon mustard if you don’t have any), a pinch of turmeric, 1 tsp garlic powder, 1 tsp onion powder, a handful of vegan cheese (optional) and 3/4 quarters of a pack of Squeaky Bean pastrami
🌱 Stir this through, let it come to the boil, then take it off the heat and add your pasta
🌱 Top with more pastrami and fresh parsley and serve!
