Macaroni Cheese

It’s never been “cheesier” to be vegan 🧀🌱

In the mood for a big, hearty bacon and broccoli macaroni cheese? You better bloody believe it’s possible to veganise that 🥦

Macaroni cheese has always been my ultimate comfort food and guess what? 🤷🏼‍♀️ You don’t have to give it up! Here’s my recipe featuring a tiny bit of a veg boost:

🧈 120g vegan butter
🌱 60g flour
🧅 1 tsp onion powder
🧄 2 tsp garlic powder (I like mine extra garlicky)
🧂 Pinch of salt & pepper
🌱 1 tbsp English mustard
🥛 500ml vegan milk (I use oat because it’s extra creamy)
🧀 150-200g grated vegan cheese (I used @violife_foods extra mature but I’m keen to try it with applewood next)
🌱 200g macaroni (pre cooked)
🧀 2 tbsp nutritional yeast (or however much you want to add without the sauce getting too thick. Add it slowly so you can monitor this)
🥦 1/2 head broccoli (raw)
🥓 A couple of rashers of vegan bacon (cooked)
🌿I also sometimes add 2 tbsp thyme for extra flavour but didn’t on this occasion – If you want to, add it in with the garlic & onion powder

Method:
🌱Place a saucepan over low – medium heat and add the butter, stir until melted
🌱Add flour and stir for a few secs. It will become quite thick
🌱 Slowly add the milk, stirring as you go, whisking until smooth
🌱Add onion & garlic powder, salt, pepper & mustard
🌱Add grated cheese slowly, stirring continuously
🌱Add your cooked pasta, raw broccoli and cooked bacon
🌱Add nutritional yeast
🌱Adjust seasoning to your liking
🌱Place the mixture in an oven proof dish and bake for 20 minutes at 210 degrees
🌱 Enjoy with a side of garlic bread if you’re in need of extra comfort ♥️

Note: If you want to make this without broccoli, just add more pasta or if you want more broccoli, add less pasta. Simples! 🧀

I also find that when adding the flour, the mixture gets very thick very quickly so even though I like the texture, I might try with less flour next time 🤷🏼‍♀️

I’ve made this recipe lots of times this year and am still playing around with the flour ratio but think this is the best I’ve tried yet. Will update this recipe if I improve it 🥰
