Dynamite Shrimp

This was a collaboration with @jensplantbase and we created this recipe together.

RECIPE: DYNAMITE “SHRIMP” 🍤

In episode two of my new series – I visited the super creative and lovely @jensplantbase to recreate one of her fave restaurant dishes.

This is a vegan version of dynamite shrimp inspired by PF Chang’s using king oyster mushrooms 🍄 So simple to make but so delicious and deffo one that will fool your shrimp-eating mates!

INGREDIENTS
350g king oyster mushrooms
Spring onions
Green leafy salad leaves
Vegetable oil for frying

Wet mix:
2 tbsp vegan fish sauce
1 tbsp soy sauce/yondu
½ cup Aquafaba

Dry mix:
¼ cup cornflour
1 ½ cups plain flour
2 tbsp nori flakes
4 tsp garlic powder
½ tsp salt
1 tsp white pepper

Sauce:
1 cup vegan mayo
½ cup sriracha
½ sweet chilli sauce
2 tbsp maple syrup

METHOD
Cut up the king oyster mushrooms into prawn like shapes. Boil the mushrooms in water for 1 mins.
Drain and set aside to cool down.

In a bowl add the aquafaba and whisk for a few minutes followed by the remaining wet mix ingredients. Fold in the mushroom and set aside.

Mix all the dry ingredients together. Coat each mushroom piece in the flour mix and fry until golden.

Mix all the sauce ingredients together. Then cover the fried mushrooms in the sauce.
