Recreating @pret’s cookie gave me untold joy so I decided to turn my hand to @wagamama_uk’s vegan yasai katsu curry which they’ve now released the recipe for 😍🥢 I chose to have aubergine as the star of the show! 🍆
🤷🏼♀️ Here’s what you’ll need:
🌱 Vegetable oil
🧅 Onion
🧄 Garlic
🌱 Ginger
🌿 Turmeric
🌿 Mild curry powder
🌱 Plain flour
🌱 Vegetable stock
🥥 Coconut milk
🌱 Soy sauce
🌱 Sugar
🍚 Rice
🍆 Aubergine
🍞 Panko breadcrumbs

Did it taste like being back at @wagamama_uk? Absolutely not 😂 but it was still delicious 🤤
We didn’t dice our onions enough so the sauce was a bit chunky and our bread-crumbing process could’ve been a little smoother, but the flavours were nice 😍 I also think you need more oil for a whole aubergine as our last few slices started to burn a little.
It was still enjoyable though and I’d definitely attempt it again and work on refining my technique! 🥢
