10 MIN CREAMY PEANUT NOODLES đ

My absolute go-to for a lazy but delicious dinner. You can also personalise it by adding veggies or protein. The perfect weeknight roster staple.
đ´ Serves 2 or 1 very hungry person
Ingredients
400g udon noodles
Cooking water (from the noodles)
Sauce ingredients
4 tsp sesame oil
1 tbsp dark soy sauce
1 tsp minced garlic
2 tsp agave
2 tbsp peanut butter
2 tsp chilli oil (I use @sunwahchillioils)
1/2 tsp minced fresh ginger
2 tsp rice vinegar
Juice of half a lime (or more if you like it zesty)
Toppings of choice: I used spring onions, roasted peanuts, sesame seeds & chilli oil
Method
1. Mix together your sauce ingredients in a bowl
2. Cook your udon noodles
3. Drain the noodles, saving some of the cooking water
4. Rinse the noodles under cold water briefly
5. Add the noodles to the bowl with the sauce and mix
6. Add some cooking water slowly until it reaches your desired consistency
7. Add your toppings of choice. Enjoy!
