Breakfast Muffin

Now this is a “cracking” way to start your day 🐣⁣

I spotted the @movingmountainsfoods breakfast sausage patties in @sainsburys and knew “egg”xactly what needed to be done 😏⁣

I looked up a couple of vegan “egg” recipes online and decided to have a “crack” 🍳 I ended up loosely following one by @thesarahsullivan which uses tofu, chickpea flour, nutritional yeast, onion powder, garlic powder, kala namak, turmeric & vegan butter 🧈 I only used turmeric on the “yolk” section as I wanted to imitate the look of an egg just for a bit of fun 🍳 For the cheese, I used @applewood_cheese 🧀 …and yes OF COURSE they’re hash browns in the background 🤤 ⁣

To be perfectly honest, I got WAY too carried away. A double was far too excessive 😂 I think the ratios would’ve been a lot better with a single patty but it was still a beautifully indulgent breakfast and took me right back to my uni days 🙃 and who doesn’t want to relive those? 😛
