I love @squeakybeanveg. I love them so much 🥰 So, I’m excited to reveal that they’ve turned up the heat in the kitchen with their latest product – hot, spicy “chicken” pieces 🍗🔥
A lot of you ask for affordable, easy to follow recipes so I decided to use mine to recreate a really quick, simple dinner which used to be a favourite in my house when I was growing up – spicy “chicken” pasta 🍝 For this exact recipe, I took inspo from @savvy.bites, @sprinklesandsprouts & @budgetbytes♥️

Here’s what you’ll need:
🔥 Cajun seasoning – Made by combining 2 tsp spicy paprika, 1 tsp oregano, 1 tsp thyme, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp cayenne pepper, ¼ tsp black pepper, ¼ tsp salt, ½ tsp fried basil, sprinkling of chilli flakes (to your taste)
🧄 4 x garlic cloves
🧅 1 x brown onion (you can finely chop them or leave them a bit chunkier if you like them like that)
🍅 1 x tin of chopped tomatoes
🌱 250ml vegan single cream
🍋 Juice of ½ lemon
🍝 200g rigatoni
🌿 Fresh basil
🍗 1 x pack of @squeakybeanvegspicy chicken pieces
🧀 3 tbsp nutritional yeast
…and here’s what ya do:
🔥Heat 2 tbsp olive oil in a frying pan
🔥Add onions and cook until translucent
🔥Add garlic and half of the Cajun seasoning, then cook until you can smell the fragrance
🔥Pour in the chopped tomatoes and the rest of the Cajun seasoning
🔥Meanwhile, cook your rigatoni in salted water (as per packet instructions)
🔥Add the lemon juice
🔥Add the vegan cream and mix. Simmer for ten mins
🔥Add the vegan chicken
🔥Add the cooked rigatoni
🔥Add nooch
🔥Add nooch
🔥Add more nooch 😛 (all joking aside, be careful not to add too much as it will make the sauce too thick)
🔥Add more chilli flakes if you want it a little spicier
🔥Top with fresh basil leaves and serve! 👌🏼😘
I might’ve added sliiightly too much nooch to mine (who knew that was a thing). For a creamier sauce, add less 😂
